(a baker’s helper is someone starting in the business. if they cannot learn all of the above within a week or two, they may not be right for the job. once you get them, they will have to learn how to mix, how to produce what you need – you’re way! they are basically a baker’s extra set of hands.)

Tanggung Jawab Pekerjaan :

clean up:
– hand washing
– set-up of three compartment sinks
– how to clean in place for equipment (wash, rinse and sanitize)
– proper mopping
– proper chemical use and storage
– equipment operations – sink heaters, warewashing machines (industrial dishwashers), mop sink
– rest rooms – separate cleaning tools and chemicals
– trash and recycling procedures
– body fluids clean-up procedures (blood, vomit, and urine)
– outside building
– windows
– how to report damage and breakage
chef/baker helper:
– help upper level baker if needed
– must know and understanding ingredients category and functions
– ingredients and storage of back stocks
– dating and rotating for raw and finished materials – dry – cooler – and freezer
– equipment & tool kits operation and cleaning
– proper portion control – scoops, measures, and weight-checking standards
– make product using “best practices”
– proofing
– proper bake/fry
– safety with lifhting, equipment, and good manufacturing practices (gmps)
– allergens and cross contamination
– use of timers-only a guide!
– use of scales
– how to read a formula
– must know the sanitations person’s job
